Really not worth the risk. . .Contamination aside, the levels of psilocybin in colonized cakes is miniscule. There's a website from [I think] the state of Wisconsin or Minnesota, where the LEO's couldn't detect the compounds in anything other than primordia or fruits. If they couldn't detect it with the laboratory methods they used, it's certainly not going to yield much in an extraction. If you do it with a contaminated cake, you're actually also extracting from the contaminant itself, and that just doesn't seem wise. 'Probably safe', but that's the same thing as 'not safe'.

Pretty much a total waste of time and effort extracting from anything but fruitbodies...

The cake takes nutrients from all parts of itself, even if one side is covered in mold and the other isnt, both parts are going to contain the toxins from the mold.
