spinach & artichoke pesto pizza
crust: 3 cups flour 1 cup near-boiling water
mix thoroughly, add more flour if the dough is too sticky. preheat oven to 475F, grease a pizza pan form the dough into a ball brush or spray dough with olive oil and let sit for 5 mins press into pan, prick the dough with a fork (the more, the better) bake crust on bottom rack for 5 mins and remove from oven to add toppings
toppings and sauce: 1 packet pesto sauce mix 1 can artichoke hearts fresh spinach 1 carrot crimini/portabellini mushrooms mozzarella cheese
prepare the pesto sauce mix and spread over crust tear the stems off the spinach leaves and make a layer of spinach over the pesto thinly slice the mushrooms and put them on next then, add the artichokes. they will cook better if you seperate them into smaller pieces take a peeler to your carrot and let the shavings fall on the pizza. (alternative: you can buy matchstick-cut carrots. they will work, but not as well) add as much cheese as you want throw it back in the oven for about 9-12 more mins.

WTF dude? you need more than just water and flour for a pizza crust..
You need yeast to help it rise, you need oil and salt to taste, and you need baking soda.... Back to the kitchen for you mister

it's not a "normal pizza." i don't like spongy crust and i don't like tomato sauce. the crust is not spongy, like most pizzas; it doesn't get soggy. this pizza crust feels and tastes like the crust that a really good pizza place in prague makes. it's the way i like it.
fyi: i bought a "pizza crust" packet at the store once. it turned out to be just a bag of flour. the only ingredient it said to add was water. i really liked that crust, so that is how i make it now.
the crust actually isn't just flour and water anyway. it does have some olive oil to it.

parma rosa pizza
1 pkt parma rosa sauce 1 zucchini crimini mushrooms yellow, red, and green bell peppers 1 or 2 roma tomatoes parmesan & mozzarella cheese
crust: same as above
cooking instructions: same as above, cook crust 5 mins @475, then remove to apply toppings. cook ~10 mins more for this one.
spread the sauce thinly slice the mushrooms, before putting them on the tomatoes go on next. slice them thin and try to remove most of the seeds/goo. slice up and apply the zucchini and peppers cheese goes on last

you can make a base with just flour and water but it will taste like shit and it will be a dead dough. there are only a few ingredients salt, sugar, yeast, flour, semolina once you have finished making your dough and after once it has risen some flatten it out and spread the semolina on a board place the dough on top of the semolina both sides this is what makes the crust.

well, we can argue about this all day long. fact: i make at least 3 of these a week, using no yeast and no salt in my crusts.

Yah, this would be a flatbread pizza. Not much flavor added but still, you can make a crude and tasteless cracker by mixing water and flour and baking it. Jews celebrate this tradition, its called Matzo bread.. But even the Jews knew enough to add flavor to it...
As for the toppings... Top Notch, good stuff.
You should try sometime adding 1/2 tbsp salt and 1/2 tbsp baking soda. When you roll it into a ball, oil it a bit and let it sit for half an hour then roll it out and bake it. You will still get a cracker but it will get that semi pizza like characteristic with the air bubbles and crunchy texture.
A note on oil... Oil makes for spongey dough when added to the dough its self.. When brushed on it is only to keep it from sticking to the bowl.
For another topping choice try. 1/4 cup sundried tomatoes 2 green tomatoes dice and pure with olive oil, salt and a pinch of sugar till smooth.
Add ricota cheese on top and bake at high temp and ONLY on a pizza stone.
Thats a good pizza.

I found that website yesterday actually when I was learning to make pizza dough. I'll post pictures of my results when I find my camera...
