Cakes drying out?

My cakes have been in incubation for 12 days now. Growth has seemed to have stopped for the past three days. Growth has covered anywhere from 50% to 75% of the cakes depending on which jar you're looking at. My temps are 80-82 and they are in total darkness. I'm thinking my cakes may have dried out. Is there anything that can be done about this? Thanks for all your help!

Its only been 12 days and you have 50-to75% coverage. Why do you think they stopped? It might just be growing on the inside of the cake where you can't see it as well as the outside growth. I would give it at least 9 more days before you start worrying. Sounds like your doing it right so far thou - and try to get your incubator a few degrees hotter, which will speed things up perhaps.

thanks for the response. growth was happening so fast on the outside that i got worried because it stopped. I guess I assumed that it would fully colonize on the outside before it started growing on the inside. I'll give'em some more time before i get too worried again.

when they appear to be slowing or stopping, often times the mycelium is working
its way inside, if you have tape over the holes on your jars, now would be a good
time to remove it, sometimes this helps speed things up again.

also you can flip them upside down. and shack the jars to breaks it up some.

the tape has been off since innocolation and i turned them upside down for 2 days. the funny thing is all my jars are completely covered on the bottom with growth, and it seems to be growing from the bottom upwards....... i guess my original question should have been....will the myc continue to grow if the cake drys out? Thanks for the replys.
