To mist or not?

So far i have been able to figure out the system ... cakes/incubation/cold shock/casing/fruiting chamber ... 3/5 containers r producing shrooms ...  the other 2 have knots but have stopped growing .... i have noticed that the top layer is quite dry ... could this be stopping growth?  The temps r between 73-77 with 95% humidity.  I misted the casing up until i saw mycelium then stoppee misting.  Should i have started misting again once the primordia have started to develop?

afoaf mist the casing once introduced to fruiting parameters everyday lightly until he sees pins then quits. seems to work out well for him at least.
