Yeah, those are oysters, and beautiful ones at that.

The same logs that produce white oysters in the summer will produce brownish gray ones in the fall. I think they are the same species and temperature effects the color.

yep nice find B ive been looking for them for a couple weeks now hope to try them out soon. I heard they are really good sauteed with butter and garlic and served with some type of meat

Yes, they seem to turn a darker color in the caps with age.

In this pic, they are young and the caps are white.


A few days later I came back to that exact same patch and picked a few. They had matured and the cap surface turned to a grayish-brown color.

(pay no attention to the mushrooms spore printing in the background, those arent oysters!)

they are the only mushroom i have tried that i actually LIKE eating. ill eat others but they dont do much for me, but these i can eat plain. but i add spices adn such anyway. damn they good. nice find!

they are sold in most organic and asian markets.. they are delicious.. i only took a few and left the pinners ill post pics tomorrow .. will this be a seasonal spot?
