Good eggplantt recipes required

I've only had eggplant with moussaka before and quite like the taste, texture etc.
Anyone out there have any good recipes???

I have the real deal (parmigiano reggiano) and an eggplant.

slice the eggplant up, bread it, fry it up or bake it, put over pasta with some kind of red sauce on top (of the eggplant and pasta) top with cheese. yum yum.

how about eggplant rollatini?
slice eggplant long ways, pan fry
mix together ricotta, mozzarella, salt, pepper, parsley, and some parmesan cheese.
place mixture in eggplant slices.
roll them up
put some gravy (sauce) on them
bake in oven until hot.

get some japanese eggplant diagonally into about 1 inch pieces. Then slice each piece lengthwise about 3/4's of the way through. Take shrimp and chicken and corn starch, salt, white pepper and chop into a fine paste(or just grind shrimp, chicken, corn starch, salt, white pepper). Stuff the shrimp and chicken mixture into the eggplant. Cover in more corn starch, deep fry until meat is cooked through. Then boil some water and soy sauce, and add corn starch slurry into it. Sauce over eggplant.

My neighbors (old deadheads) always talk about something called Hippie Eggplant . It calls for mushrooms and such.. I forget but you should look it up.
This year I grew egg plant for its aesthetic value (its very pretty and surreal) . I decided to try some so I cut it into one inch slices (so it formed O's not long ways) .. then I cut the skin off them. I cracked some eggs and dipped the slices in the egg thne dipped that in some flour and fried them. I'm not a very good cook but it didn't taste horrible. You relaly have to be in the mood for it.
Once my wife tried to cook egg plant on the grill. It didn't turn out very well but im sure if we did something different it wouldnt be too bad. They have a cool kinda taste to them, I guess they sort of remind me of mushrooms.

eggplant is amazing stuff, try eggplant parmesian, it's not too hard to make and is very good.

babaganuj or whatever that egg plant mayo tpe sauce is. its relaly good for sandwiches adn stuff. mm mmm. someone shoudl be able to give you teh right name.
