Letting Jars Cool before Innoculation

Hi:

We are about to pressure cook some jars and it says "after letting the jars cool in a dark warm place, innoculate. Does this mean cool to the touch?

yes you done want to innoculate them when they are hot remember center may be hotter then the out side

Let the jars sit overnight or you risk rendering the spores unviable. What's the hurry anyway... it's gonna be weeks before their birthday and one more day won't make much difference.

Yeah, i would wait until the jars have reached room temp....if you're doing grains, then shaking might also help make sure that it all reachs the same temp at the same time. Otherwise you'll kill off your innoculant.

if I was to steam say 16 jars with tape/foil over the lids... after the steaming (pressure cooking) is done, can I just leave the jars in a cool dark place for a week-2 weeks without it losing necessary moisture or having something go wrong/bad?

so say i sterilized the jars, and waited a week to pull off the tape and knock them up... would they still be 100%?

If they've been sterilized properly, they will easily keep a few weeks with the tape on...
