7 weeks colonizing in bags, too long? Move to FC now?

Guys!! I am in serious need of some help.  This is my first attempt.

My grain bags that I bough pre-sterilized have been slowly colonizing in my closet from spore syringe method. I just read that they might get too dry if left in the bags too long, and I inoculated these 7 weeks ago!! I don't know why they took so long to colonize, except that I didn't shake them up (oops). Temps were between 75 - 83. One of the bags was almost 85-90% colonized, almost fully white, and now that I've shaken it up it doesn't look as white, but you can clearly see mycelium on most of the grains. Should I put them into fruiting chambers asap? The other consideration here is that I am trying to get fruit from these as soon as possible, and planning on doing a grain to grain transfer with a little bit of the mycelium for future projects.

For fruiting, I have coir and vermiculite, but no official container yet. I have some shallow pans or tupperware I can sterilize and use though.

I can work on this tonight and tomorrow, so any help will be really appreciated! Thanks in advance.

Update:
I decided to spawn most of the bag into 4 small containers, mixing it with straight vermiculite at field capacity, 50/50, and in 1 smaller container, I did 75% grain, 25% verm. I took a little of the bag's contents and G2G transferred into 4 new jars of sterilized wheat berries, which are colonizing well. The 4 small containers mixed with verm are exploding with mycelium, and quickly! They are almost completely white with fluffy new mycelium, and I'm glad I did it, because it seems that the myc just needed a lot more moisture to thrive, and that the bag was in fact too dry for it to grow any more. In short, WHOOHOO!!
