Day Around The Bay - Oysters, Boletes, Mutant Chantrelles

Hey gang, I took a little hike today to see if Chantrelles are still popping.  I found that they there are not nearly as many as a couple of weeks ago but there were a few nonetheless.  Anyway, I would appreciate some help IDing some of these.

Oyster?



Bolete or Sullius - I didn't pick it but the size was impressive!


Found these little rusty colored ones.  The gills leaked latex with the slightest touch.  Are these candy caps? They definitely seem like a lactarius species.  Has anybody eaten these?





The first chant that I found was past it's prime so I let it be.  It was a biggin, though.


I went to all my normal spots and got skunked.  Then I found this mutant under some pine trees.  Yes, pine.  Totally unexpected.




I had given up searching for another hour after I found the mutant.  Then 20 yards from the main fire road, I found two choice chants:



Here is my small haul.  Maybe this week's rain will bring more? Overall, it has been great learning how to find Chantrelles not too far from my home.  And they taste great!

nice finds gravity. yep they're oysters! your other mushrooms are Suillus luteus or S. granulatus and Lactarius rudidus.
Oh no! i haven't been skunked yet, just close calls. did you de-scentify?

Lactarius rudidus - Okay, so candy caps it is!  I didn't pick many but will probably go back up to gather more. 

Anyone have any good recipes for these?

The Candy Caps are best dried and powdered in my opinion.  You then mix them into breads, cookies, and puddings.  They are fun for sure!

Ha, no I just meant that I didn't find anything.  In some sporting events they say you got "skunked" if you don't score any points.

I make ice cream with them, or sauté them fresh with chanterelles before throwing it all in a blender and adding hot stock in a slow steady stream while pulsing the blender. hit it with cream at the end. i use enough stock and cream to reach my desired consistency which varies from porridge to melted ice cream.
