Thai Tom Yum Goong - the secret.

I always judge a thai restuarant on its tom yum soup. If its crap then they arent authentic. A true tom yum goong has a number of ingrediants that many western chefs ignore. Here is my brief authentic recipe that will guarantee our tom yum soup will taste 100% authentic.
Ingrediants: asianshrimp paste (in a block) two tablespoons garlic (3 pieces crushed) one lemon sesame oil (for the pan) one white onion finely chopped two teaspoons of galangal (white citrus ginger available at most asian grocery stores) two/three tablespoons of tamarind rinde (THIS IS THE CRUCIAL INGREDIANT!!!) three red chillis finally chopped to taste two kaffir lime leaves (another asian ingrediant) one can of straw mushrooms (any mushroom works) ten fresh prawns some seafood stock a large handfull of diced coriander leaves some beanshoots if your keen chopped carrot.
Ok here we go now: In frying pan fry the shrimp paste and garlic in sesame oil for about 3 minutes on hot to mediu heat. add onions and prawns - five more minutes until onion is caramelised. add chilli - three more minutes now add 500-700mls of stock, the two teaspoons of galangal, the tamarind, ginger (optional) and stir well. two this add all the other ingrediants - and squeeze half a lemon into the mix - add the coriander just before serving. allow to cook low for twenty minutes. i prefer lemon to lemongrass but lemongrass is truly wuthentic. you can also add vietnamese mint.

i bet when you're frying hte shrimp paste with the sesame oil you'd have to open all the windows in your house/flat and cover your items with plastic sheeting cause that stuff stinks!!!!!!!!!!

just on a side not, I'm looking through the menu for the local thai place, and the fourth soup is "Pet Soup"

Shrimp paste- ka pi- whew- what an aroma. Some Thai friends of my told me that if a monkey in their village was being annoying they would rub some ka pi on the monkey's nose- and THAT would solve the problem- bye-bye monkey. Wonderful in fried rice though Kao Pad Ka PI.

Sounds great to me!! Although i would say lime instead of lemon. You don't really see lemons in thailand.
