naga morrich, not naga ghost pepper...

you have to persevere. only few people can eating pickle jalaps all day like you do. you are already ahead so build on that.
believe me, the naga pain is totally consumed by the pleasure. this pickle is made with fenugreek and coriander etc etc so its likle the mango pickle you get in indian restaurants.....except it 100 time hotter!

you are a woman with strengh and drive. you can handle this shit. i can so you can.

Also that pickling solution sounds awesome. :takingnotes: Mine is only seasoned with garlic. I would have gone more experimental but it's the first time I made it.

My favorite hot sauce from the store is Melinda's Naga Jolokia sauce, you only need a few drops for most dishes but it has a bit of papaya added in that somehow adds a lot of nuance to the flavor. I recently noticed however that EVERYTHING tastes better homemade...

i made a killer sauce for a family barbeque last summer:

mangoes
papaya
pineapple
banana]tomatoes
garlic
sugar, salt
vinegar
scotch bonnet
finger chillies
habanero peppers

its was the holy grail of hot sauces. my heart skips a beat when i think of it....

What proportions? :takingnotes: I'm going to put the recipe up on my fridge so I remember to buy the ingredients next time I go grocery shopping.

I love how you can eat a few pieces rapidly to amp up the burn (dabs forehead with a napkin)

roughly equal mango, papaya, banana and pinapple- say one small fruit of each, say 1 cup of each

twice as much tomatoes- two cups
a half cup of vinegar, at least 4 cloves of garlic and an quater cup of sugar. salt to taste. add two cups of water.

whack in the peppers, stand back,  and stew that mother for about a hour on medium low. when its all one big mushy stew, pass it through a sieve, let it cool and then bottle or jar it.

there is a fair amount of lea way, play with the ingredients. i sometime add some smoked paprika for a bit of depth and the beautiful red colour it imparts.....
