Heya,
What can I order at a sushi bar that will give the Chef the opportunity to show their skillz?

yea it is all the same as far as the cuts, if the fish is quality then it will be apparent. the plating is another story, sometimes that is 3 times more work then setting a slice of fish on it.
if you are doing rolls then there is more room for expertise to be shown but again at the end of the day it is a roll, unless they are making you something off menu anyone else there should be able to make it.

I think the main quality factor in sushi is the ingredients themselves and the preparation of the rice. The preparation of the sushi itself is but a step in a long process. You test the quality of the chef by ordering a variety of sushi and by carefully savouring it and paying attention to the individual flavors as well as the combinations; is everything in balance? I will and dit I would be able to distinguish a very good sushi restaurant from an OK one, as this kind of judgement in my opinion takes experience from the taster, just like the preparation requires experience from the staff.
When all is said and done though, I'd say you eat out for your enjoyment, and not in order to test people, right? So if you have a nice time and enjoy the food, that seems like the main thing. Unless you're one of the few, grumpy restaurant critics doing their job - but then you wouldn't be asking this question

I think the simplest cuts take the most skill and energy. Ask for some basic salmon or tuna nigiri.
