What I used in place of the peat moss is a steer manure mixture that is 70% manure and 30% compost.
I mixed that with the vermiculite in the normal 50/50 ratio. I added oyster shell and then put it in quart size jars. PC it for 60 min at 15 psi.

Once it was cool I put a 1" layer of the manure mixture in my tub and then spread out two quart jars of colonized spawn and covered that with a 1/2" layer of more manure mixture. I used some rdy vermiculite to cover any exposed areas of popcorn spawn.  My tub has a ratio of 2 quarts of spawn to 6 quarts of manure mixture.

Thanks for telling it to me straight mushpunx. I've still got a cpl jars of grain so I'm not completely out of the game yet. And I'll do some more research.

I patched it with dry vermiculite and misted and fanned it. Plus I loosened up the poly fill in the top holes.
