Salt And Mushrooms

I have a very veryverylarge amount of mushrooms to dry, I have them almost almostcrackers dry but they need to be dryer. Can I just fill a vacuum bag with table salt vacuumed seal it and leave for 48hr?

This would not hurt the mushroom rite?

Then after 48hr I figure I can dump the salt in a strainer and sift out the mushrooms.

What do you think?

Hey fungi_x,

I have to say I have never used salt in preserving mushrooms before. My friend used to vacuum seal lots of mushrooms with a small pack of desiccant which he made himself. :wink: He would pour a few table spoons of desiccant in a coffee filter, and close it off with either a twist-tie or packaging tape.

Now there are two options here...

(1)Simply vacuum seal the mushies with a desiccant pack in a bag. (Mushrooms get nice and dry, but some caps and stems crack or splinter when the bag comes crushing down)

or

(2)Vacuum seal the mushies with a desiccant pack in one of those food saver containers. (Mushrooms take slightly longer to "cure" or dry, but mushroom caps and stems to not split or get crushed.


Both of these methods provide very good 2nd phase drying, and longer term storage options for the bulk grower. I hope you find this as useful as my friend did after his success.

If anyone has anything to add,  comments are greatly appreciated on the home-made desiccant pack, and sealing methods. I dont know if anyone has done this before, but it works extremely well. As long as you follow certain guidelines, like not putting overly damp mushrooms together when you seal them you should be fine. If anyone wants me to go into further detail, perhaps I could write up a quick FAQ.

Bake the salt in the oven first to make it ahydrous.

I do know that Epsom salt works better than table salt. Alot better. You are going to want to bake the moisture out of the salt before you use it as a desiccant. Also, I would make the little desiccant packs using coffee filters to keep the salt off of you shrooms. If you use Epsom salts, this is a must because epsom salt is a laxative. You don't want that contaminating your shrooms.

Use Desicant Purchased from Franks Nursrey for flower drying. You can bake it and use it over and over. Use fine mesh screen to seperate the shrooms from the desicant.
