Cake/Casing Question

Ok, I'm a first timer. I have 6 jars seemingly ready to birth. My question is (since I've never done this & it's never been addressed) are the cakes only surrounded by mycelium on the outside, or all the way through? I ask, because I'd like to case, and was just curious if I'd have to deal with grains that weren't colonized.

No, the mycelium is all the way through. If you are gonna case em, I'd wait about 5 days after 100% colonization just to ensure that they are solid befor breaking them up....
