growth of oyster mushrooms

What is the best substrate for Oysters? I have grown them on rye grain before with a low yield over two flushes. Is it possible to grow them in jars or should I stick to bags? Jars would make sterilization easier. I know you can use straw but I am not sure how much to use or the best way for sterilization? Any advice on this issue would be greatly appreciated.

You probably dont want to be fruiting off grain; waste of time. You should expand to pasturised straw or sterilised woodchip/sawdust. Supplemented sawdust in jars may be more worth your while but pasturised straw is very forgiving and easy to do in bulk.
There are teks everywhere: Search net or shroomery or go to library.

Its out just a matter of substrate.
If youre just fresh from starting on cubes it can be daunting to realise that just about everythings else is much harder!
Cubes will fruit regardless

Oysters need a bulk substrate but it only needs to be pasteurised.
They should be spawned then incubated to full colonisation in complete darkness
They will fruit automatically when the substrate is colonised.
Maximising the yield can be achieved by trying out the strain
1)one different substrates
2)Using cold to induce heavier fruiting
3)Using CO2
4)Using light

the response from light exposure is maximised when the substrate isnt exposed to it during colonisation, and so is the CO2
After induction the degree of light exposure creates colour changes (more light - more colour)

Should I start with a sawdust substrate for innoculation? I can't get agar to grow for some reason. Then should I spawn larger bags of straw? I have read both of Stamets' books, but they start with agar and I dont have the facility for that.

Keep practising with the agar, get your basics down.
You dont really need much in the way of facilities for agar.
You dont even need plates.
If its a 'sterile' work environment you lack a trigger spray bottle and a decent sized plastic container from Kmart, or wherever, makes a decent glove box. You dont need the gloves if you disinfect hands regularly.
I have mates that still do it this way and they have a suitably low contam rate.
