Braised Pork with Apples, Mushrooms and Calvados

1 cup sliced shiitake mushrooms
1 cup chopped yellow onions
4 ounces pancetta or bacon, chopped
3 cloves garlic, minced
2 tablespoons unsalted butter
1 1/2 pounds pork stew meat (shoulder), cut in 1 in pieces.
1/2 tsp kosher salt
1/4 tsp fresh ground pepper
1 tablespoon chopped fresh tarragon (or subsitute 1/2 tblspn dry)
1 tablespoon chopped fresh thyme (substitute 1/2 tblspn dry)
1/2 teaspoon poppyseed
1/4 cup white wine
1/3 cup Calvados or other apple brandy
1 cup chicken stock
1/2 cup sour cream
1 cup peeled and cored and sliced macintosh apples
extra salt and pepper

Garnish: Toasted, Diced almonds; chopped parsley.


In a large saute pan over medium heat, saute mushrooms, onions, pancetta/bacon, and garlic in the butter until onions are tanslucent, should take 5-7 minutes. Season pork with salt and pepper. Add pork, tarragon, thyme, and poppyseed and continue sauteing until pork is lightly browned, about 8-10 mins. Add wine, Calvados, and chicken stock and bring to a boil. Reduce heat, cover pan, and simmer for 40 minutes. Stir in the sour cream and continue simmering, while covered, for about 15 minutes to reduce liquid further. Add apples and continue cooking 3-4 minutes to barely cook apples. They should still be a bit crunchy. Season to taste. Spoon onto plates and garnish with almonds and parsley. Serve with spinach fettuccine or spaetzle.

The perfect wine to pair with this meal is a Chardonnay - preferrably a barrel aged chardonnay.

An alternative wine would be Pinot Noir. I prefer the Chardonnay though.

This is a recipe with a lot of ingredients, but it is very easy to prepare, and VERY good. Quite impressive as well, especially when paired with the right wine. I assure you the ladies will love you, if you cook this for them (unless they don't like apples).
