Mmmm... Sounds good, but that's really cheese topped 4 alarm chili using nachos to scoop and eat it, (which is the best way to eat chili anyway).
That's a pretty good chili recipe though!

The Rom Jeremy of Nachos. By Dozer.
Plate full tortilla chips (lightly salted) Lean Ground Beef OR chicken (depending on your tastes or mood) 1 cup shredded lettuce 1/2 cup diced tomatoes Light Sour Cream Guacamole 1/2 Cup Shredded Extra Sharpe Cheese/Mexican Cheese Jalapenos or Cyeanne Pepper (preferably jalapenos) and A Smattering of Bean dip
Through many a stoned nights has this recipe fufilled that unending nacho craving (just make sure to make plenty, especially for when your stoned friends show to raid you fridge).

My Favorite Nachos
put 2lbs chicken breast and thigh meat or beef chuck roast in a crock pot with one can of enchelada sauce, 1 cup water, 2 jalapeno peppers, salt and pepper.
Crock pot it for 5 hours.
Roast red, green, orange and yellow peppers on the stove and remove the peel. Dice with onion, 1/4 to 1/2 scotch bonnet pepper, scallion ends, cilantro and peeled/seeded tomatoe. Add lemon juice and 1 teaspoon tobasco and 1 teaspoon sugar.
Let sit till meat is ready.
To make the cheese sauce saute 2 tbsp flour and 1/2 stick butter in a pan till slightly brown. Add cream and milk till smooth, add 1 1/2 lb peperjack cheese and 1 lb of colby jack cheese, stir till melted.
On a plate put lots of chips, cheese, shreaded meat, sour cream, guacamolie, pepper sauce and garnish with fresh peppers, tomatoes, scallions and shreaded cheese...
This is how they make it at my favorite resturant.. I have yet to do it all at home...

gabbadj... Forget my post. THAT is the Ron Jeremy of nachos! It's understandable as to why you haven't made them at home though. That would take so much time and create such a large mess, it would hardly be enjoyable after all of that. It sounds absolutely wonderful though!
