More Root Vegetables - Soups & Mash

It's a winter thing.
I like eating root vegetables in the winter, it makes me feel good. Traditionally long storing foods like roots, seeds and bulbs were stored to be eaten in the winter.
Some good things to do with a sack of potatoes or other roots is to make soup or mash!
Boil em, mash em, stick em in a stew!
Everybody likes mashed potatoes, but try using different kinds of sweet potatoes, yams, squash, and try mixing them! Try adding other things like mushrooms or whatever else you can think of!
Basic recipe:
1. peel & chop roots, then boil em for maybe 30 mins 2. drain the water then add butter & seasoning (anything you want,) & mash it! 3. DONE!
Another thing i like to do is make soup!
Soup is very easy, cheap, and you dont need many ingredients.
Basic recipe:
Ingredients: 1-2 medium onions 2-4 large potatoes salt butter/oil
Method: 1. chop & fry them onions in a pot until medium golden 2. add water and chopped potatoes, cook it on medium high 3. once potatoes are cooked mash a bit of them in the pot to thicken it a bit 5. salt & season
Very basic potato & onion soup, but it makes a good winter meal if you ask me.
The real fun comes when you start adding other things and using different roots.
you could add mushrooms & cream and make a mushroom/root soup you could add clams & cream and make clam chowder. you could use more onions and make french onion root soup you could puree or mash yams, squash or sweet potatoes and make a thick soup. mash some split peas and make pea & ham soup add turkey & other vegetables for a killer turkey soup the possibilities are endless
Using mashed up roots and starchy vegetables as a base ingredient you can make all kinds of hearty winter meals that will warm you up and fill your belly!

Tonight it was squash & yam soup with ham... good stuff.
Recipe: makes about 8-10 bowls
Ingredients:
1 regular butternut squash 1 regular yam 1 medium/small onion couple slices of ham butter satt&pepper
Method: 1. Fry the chopped onions in the butter until golden 2. add the diced ham and fry it in there for a few minutes 3. add chopped & peeled yam & squash and fill with water until covered. 4. when yam & squash are cooked either mash them in the pot or blend with a food processor. 5. cook off water until desired soup consistency if you added too much. 6. add salt & pepper to taste
Really easy and tasty, the salt balances the sweetness of the yams & squash.

I have a butternut squash that's been sitting around far too long. If it's still good when I open it, I'll try a variation of your squash soup with sweet potato and some crispy cured ham for garnish. I also have some half strength chicken stock from my cacciatore that I can use for this. Thanks for the inspiration!

Stock is always a welcome addition
Sweet potato / squash is a very common combo for squash soup, I opted for yams just for adventure's sake
You can make a pretty good soup with just sweet potato, squash and salt... its amazing.
Soups get me all excited
your cacciatore looks amazing BTW

these things are best washed, cut in half, scooped out, loaded with butter, cinnamon, and sugar, and baked at around 300 degrees for like just long enough to make them soft... Then, scoop out all the goodness and mix it up in a bowl making a sort of squash Sou-Flay....
You can even just cook it and whip it up with some cream and sugar afterwords..Drool
