pasterizing mayhem pllllllllllllz help

so today my cat has a lot of pasterizing to do.he started pasterizing his first batch and a half hour into it he sees little bubles coming from one 2in spot. so quickly he checked his not one but two gauges(both of which were acurate)and they both were at 170. so he decided to check the temp wheer the bubbles were and bammmmmm,200 so he checked all around the pot and every spot but the little patch of bubble was 170. so the patch was 200 killing what i want to survive.i switched pots in the middle of this and as soon as it got to the temp those bubbles appeared and the same thing happened . my cat has alot of pasturizing to do today but dosent want this to reacure help,are there better ways..than inside of a pillow case in a pot on the stove??????????????????????????????
also how acurate is the themometer if it only fits a few inches in wouldnt the bottom be hotter help im really stuck any opinons pleaseeeeeeeeeeeeeeeeeeeeee

don't be so worried.

as long as the middle of the pot says 170 you are up to temps. turn the heat down to very low and keep it at 170, it should not boil at this temp. if it does. lower the temp some more .or turn off the heat completely and let it sit.

better yet sue oven bags.

i use a big 18 gallon brinkmans 12 bucks tub all 4 burners but this will still work for you what i do is heat water to 170 place in bed sheet filled or pillow case with big wooden spoon like a witches coldrent constently poke prod and stir with heat off heating on high for 3 minutes every 15 minutes to keep the heat stable better to be under then over for bacterial bloom Dooms day ........
