how to lower humidity in incubator?

My dog has a double rubbermaid bin incubator, with water and a submersible heater in the lower part. This keeps the temperatures at a good level, but it also creates for really high humidity in the incubator. The mycelium is growing in the jars, but it's quite fuzzy, which I've heard is a symptom of high humidity. It is also growing very slowly. Is there any way to lower the humidity inside the second chamber? The dog has the incubator assembly inside a larger bin, to insulate it from the extremely low temps in the room he's using, so I was thinking that taking the lid off the incubator might help, while the lid of the larger bin would keep the heat in.

Also, the incubator has an odd smell about it, kind of like warm cheese or milk. I have a feeling it's due to the humidity as well.

You are confused.
If the MYCELIUM grows fuzzy on the MUSHROOMS when they are fruiting, this is a sign of high humidity.
In the double bin incubator you shouldn?t have issues with a too high humidity.

Thanks for the clarification, anno!

The dog stuck a hygrometer into the incubator and it's showing over 85% humidity. There's also condensation on the lid, when he pulls it off.

So what is this bright white fuzzy stuff on the dog's popcorn?

OK, but then you are having a lid over BOTH of the bins. In this case the humidity will be high, right.
Cover only the inner bin.

i get water in my " Inside " bin as well.. no big deal.. leave the foil loose on top of you jars to prevent water from getting in. and it's all good. no worries!

Check the sides where the handles are at(the built in ones) There should be a hole on each side in the handle. Water evaporates and goes directly in these holes therefore causing condensation. If you seal these holes it will still go through the lid and you cant really seal that. You might want to place a small bag of dessicant in it, or just daily mop up with paper towels. I havent solved the problem yet

i mop it up once ever few weeks!!!

it causes no harm.. why bother?
