What are these used for? and where can I find them? I have read that baking soda works as well(to bring a casing's pH down) is this true? Peace.

They do balance casing PH. Hydrated lime, and lime flour (pulverized limestone which is more "forgiving" than hydrated lime) can be found in garden stores.
