Shrimp Russula's

I found some shrimp russula's in our yard last year. I was to scared to eat them last year because they were a gilled mushroom. This year I am way more experienced. So last night my wife and I sauteed them up with a prince agaricus I had found that day. They were all delicious. So today we went out to collect more shrimp russula's. We got them home and cooked them up. They were red caps and the stems were really rosy. I know that shrimp russula's should usually have red or a blush of red on the stalk. Not pure white most of the time. Even though some of the shrimps form last night did have white stems. So we tried to eat the mushrooms and damn they were peppery bitter... YUCK... What happened here?

Hopefully this will help. Unfortunately there are a decent number of red Russula species which look very similar and thus are not easy to separate in the field.

You most likely got russula emetica or a similar, acrid species mixed in with your collection. When picking yellow or red russulas, it's a good idea to taste a tiny bit of each species (or even each specimen) you find to ascertain that it isn't peppery. Also avoid picking dark-bruising russulas.

Are you giving a rule of thumb for Rusullas?
I find Russulas constantly and would like to sample them
I am just worried about picking the wrong one

As I understand, it's pretty much a rule of thumb. I'm not sure how broad it should be applied, hence my mention of applying it only to red and yellow russulas. I'm not sure about the other colors.

I agree with the taste test.
Most are very peppery. (take some mouthwash or fishermans friends with you :smile:.
I'd almost given up on Russulas due to the above but yesterday just found my first Shrimp(Russula xerampelina)here in the PNW on Van. Isl.
Tastes pretty darn nice.(with butter and Soy)
The gills do stain brown with handling which is described in the Matchmaker.
According to Matchmaker the cap can vary a lot! but these were wine/purple, darker, almost black in center with light pink stems.
I have seen many (apparently) identical ones that were peppery.
I have not ID'd the difference yet but I will.
