Monster shiitake popcorning, need help

Hi everybody. I actually have 4 shiitake 75 bags: substrate is pasteurized, unsupplemented sawdust, inoculated with spawn (wbs). I kept them at about 20-22° celsius (68-71F), at dark. They fully colonized in about 15 days, mycelium was aerial and looked weak. Then, about 2 weeks ago myc became to look very strong and started to form "agglomerates". I decided to wait, because I already read here that the best thing to do is to wait browning stage (even if in GGMM I found out that bag can be removed at this stage). But now, these things are continuing to grow, and bags are near the break point. What should I do? Remove the bags or still waiting?

Don't fix what isn't broken. They need to brown in the bag for a month or two at least past full colonization. Don't strip the bags off for another month or so. RR

I need your help, again
Blocks are not browning properly. In my opinion, that's because there's still some humidity inside the bags. This is how they look actually
2 weeks ago I unwrapped a block, just to see what it had do. It seems to brown much faster than other blocks, but it's not pinning and is pretty dry to the touch
One of the wrapped blocks it's still popcorning, as you can see
and my question finally is: what should I do now? It's worth it to unwrap the other blocks to let them brown faster, then do a 1 week cold shock and 24 hour soak? Or should I still wait?

never grown them(in bags, just outdoor) but all u can do is it and wait or try to fruit the one outta the bag and see if that was the right approach. patience and good luck!!

They look great! Good job.
If they are S75 they will probably start pinning in the bag soon on their own.
If they don't pin you might want to keep them in the bags for a bit longer.
I like to cold shock them in the bag to retain as much moisture for as long as possible. I also like to chill them at night, then move them to warm sunlight during the day to initiate pinning, but I'm not sure if that's common or not.
If the unwrapped one doesn't pin in a week or so it will start to dry out. You might want to soak it, shock it, then do the cold/warm+sunlight thing I mentioned - at that time.

yeah, strain is 75; they're just popcorning, no pinning for now. I'll still keep them in the bags for a bit, but I don't want they start to rot or contaminate, due to the excess water in the bags. I soaked the unwrapped block for a few hours just to see if it will pin. I'll update the post in a week or so, thank you for now

well, now there's another update, unfortunately a not very good one
I kept the wrapped blocks in the closet this week, and they're looking about the same. But the unwrapped block started to pin these unidentified monster-blobs!
what should I do now? Any help is really appreciated

definatly shiitaki mutant, possibly your substrate was too nutritious? or something was off.
perhaps you will still see good fruit from this block

Next time use a lower spawn rate? Blobs are usually caused by oversuplimentation or too much heat.
But blobs usually come at the beginning only, then good mushrooms form later. Just pick them as soon as you know there is no cap, and move on to second flush. That means wait a week or two, then soak, shock, fruit.

Thank you, that's what I wanted to hear Definitely I used too much spawn, although didn't use bran at all. I'm gonna remove these mutants and update as soon as situation will change.

The mutant is from exposing to fruiting conditions early-pick it/them off. Leave them in the bags for two to three months, or at least a month after browning. Browning out of the bag, unless you have a controlled environment will lead to green molds. RR

Indeed, there was some free air space in the upper part of bags, but then blocks started to popcorn crazily and it disappeared However, I didn't have autoclavable bags at the time of inoculation, so I couldn't do the work perfectly (filters are just pieces of plastic bottles filled with polyfill )
