I bought 2oz of black truffles, shredded them and infused them in safflower oil (for maximum neutrality) and am frying up some scrapple in them.
Take THAT, decency!

Truffle oil is always used as a finishing oil after a dish is prepared, like on pasta or vegetables. perhaps steeping the truffles in oil for a couple days then drizzling some on top of your scrapple would have proved more efficacious.

truffles are very tasty ingrediants.
Are they worth the price? Not even close.

I love how people are getting upset because how the OP spent his money. Quick say you use it for sex lube, that will really piss them off.
BTW, how is scrapple? I seen it, but decided against it. Is it like spam or treet?

MidRange, scrapple tastes like polenta made with pig parts, pig broth and sage seasoning, it's awesome.

Never had polenta per se, but had all sorts of grits, which I assume is very close. Kinda sounds like spam made form the opposite end, i'll pick some up and perhaps some truffles...

Where may I ask did you get your truffles?
I hope not at Wegman's because that is absolutely the worst place to get them. Truffles should NEVER be stored in rice unless you are purposely infusing the rice with aroma, the aroma of truffles is very volatile and dissipates quickly when oxidized. Fresh truffles should be wrapped in moist paper towel inside a tupperware container in the fridge.

nothing found on this continent even remotely tastes like truffles from Perigord France or Alba Italy. Same goes fro the australian/new zealand and chinese varieties commonly sold fresh here.

I don't think he ever claimed they were of a certain quality, I'm not sure why you seem to be so defensive about this?

I don't read what soochi is saying as defensive, just a bit snooty.
This whole subject is something people feel is a matter of good taste, and feel strongly about. He is not at all alone in this point of view.
I clearly don't feel that way.
I'm curious of course of the degree to which
Quote:

is true.
I mean, these black ones tasted interesting (in other experiments), would be interested to try white truffles.
I'm just a home cook, no chef. Can't claim my tastes are refined. I like trying new things a whole lot, though.

I found this years ago and it really stood out for me - not sure what the consensus take is on it though
http://www.gq.com/food-travel/alan-richman/200908/alan-richman-perigord-black-truffles-tennessee
I brought my truffles to the restaurant Cru in Manhattan, after chef Shea Gallante agreed to arrange a blind tasting, the French Périgord truffles he had on hand versus the Périgord truffles I'd brought back from Tennessee, melanosporum versus melanosporum. The Tennessee truffles were three days out of the ground, absolutely at their peak. The French truffles, at least two weeks old (not unusual for imports), seemed drier and more brittle when I looked them over in the kitchen. Five of us went to Cru for the tasting, and Gallante prepared two dishes.
The first was a poached organic egg on farro risotto, surrounded by a cheese emulsion. The second was pappardelle pasta with butter and Parmigiano-Reggiano, absolutely traditional. Truffles were shaved atop both.
To me, the bouquet of those from Tennessee was distinctive, probably because I had picked them out. I found them clearly superior, almost certainly because of freshness, not because of origin. I recalled Michaels telling me that truffles from trees growing next to each other were just as likely to be dissimilar as truffles from different countries. The Tennessee truffles were fresh, lively, and fruity, while the French specimens seemed tired. Said Gallante after the meal, "The Tennessee truffle was sweeter on the palate, almost like it had sugar content. In the kitchen we wondered if this was from the soil or due to the freshness. The French was more gaseous, the Tennessee more delicate."
I'm not claiming that my truffle tasting was the equivalent of the famous Judgment of Paris in 1976, when American wines were found to be more delicious than French wines, but here's the final tabulation, based on five voters tasting two dishes: Tennessee, 10; France, 0.
