It depends on the size of the piece you need to graft.  Pereskiopsis spathulata is generally agreed to be the best for seedlings or areoles.  It can get basically cacti to grow at the speed of a plant. If you're grafting something larger, a lot of people use hylocereus, san pedro cactus or myrtillocactus geometrizans.

My personal favorite is Myrtillocactus geometrizans (Blue Myrtle Cactus) because the Lophs grow a bit more natural since Blue Myrtle doesn't grow as fast as Pereskiopsis or any of the Trichocereus....

Also the grafts seem to take a lot more often with Blue Myrtle... Not that I have any problem with the Trichs, but it just seems like Blue Myrtle delivers the immediate growth more often than not.

All together though I frequently use Myrtillocactus geometrizans, Trichocereus pachanoi, Trichocereus cuzcoensis, Trichocereus peruvianus, and Pereskiopsis Spathulata...

I've also been experimenting with Hylocereus grafts, but haven't had much luck yet

Trichocereus spachianus is a good one. I grafted an astrophytum to it once and it did a good job. Nice strong growth without bloating the scion. It produces offshoots very easily too so obtaining enough stock isn't ever a problem.
