Cut uncolonized pieces off, under no circumstance??

Hey all.. my friend has several jars incubating.. This friday will be week #5. All of them are stalling on the top part of the jar. I'm not really sure how large of a dry layer he made but from my point of view, i'm not sure if they will ever colonize the top part.. so my question.. if he is very sterile with his procedures.. is there any reason why he shouldn't just cut the top part off and fruit the rest of the cakes? Any information on this subject will be of great help. Thanks.

yeah, you can do that...just make sure there's no uncolonized substrate left attached to the cake.
