Cold shock is bunk. P. Cubensis is a tropical species and all it does it slow down pinning. If your jars are pinning in vitro, go ahead and birth them. Scrape off the pins (they're pretty potent, especially fresh) and then commence with a dunk and roll.

there's no reason to do a cold shock with Cubensis, regardless of the circumstances.

If, when you birth, the fruits are too large for you to confidently and safely roll them, then simply roll around them and sprinkle verm around the fruits/pins, it will stick.

Not trying to pick a fight but I've never understood the logic behind removing pins/fruits before dunking, worst case they abort after being placed back in the FC and you'd be where you were if you picked before dunking, but best case they continue growing and you end up with more mushrooms in your flush.
