No amount of boiling will distill water.  Try buying a gallon of distilled water from the grocery store.  Note that distilled and sterile are not the same thing.

Destilled water is pure h20. Sterile water may contain some minerals and organic material.

Is it really a big deal? I've used spring water coming right out of the rock for years.
All I do is boil it for awhile.

i think you're confusing shocking with dunking .
a 12 hr. dunk should be enough .
most cubes do not require cold shock .
other species such as wood lovers need lower temps to start pins .
i move my oysters to the fridge for 12 hr. per day until they start pinning .

I had some problems with contamination and the water i used to mist was the culprit, since then i've used destilled water to do that task. I also use destilled water to make syringes. I use tap water for all the rest, making substrate, perlite humidification, etc.
If you have good results with the water you're using then i don't see why you have to change. Think about it if you ever get unexplained contamination.

Forgot something, for a cold shock dunk i use a 1:10 h2o2/h2o mixture or an alternative 1:200 bleach/h20 one, anyway i'm a contam freak.

To distill water you have to collect the vapor that is boiled off and reliquify it in a codenser. When liquids boil the vapors do not contain any of the solids that are dissolved in the liquid.
