Cakes are drying...feedback please
    #1249333 - 01/26/03 02:28 AM (21 years, 1 month ago)

My cakes are drying out instead of pinning. I put in 3 separate cakes at approximately 2 week intervals into my humidity chamber, which is at an RH of around 95 % and a temperature ranging from 24-28 Celsius (75-82 Fahrenheit). Instead of pinning, the cakes seem to be drying out. The first one has been in there for 6 weeks and is dry, while the last one has been in for about 2 weeks and is drying out. The cakes were 100 % covered when placed in the growing chamber. The chamber is exposed to indirect daylight.

My next steps are:
1) Lower the temperature to between 21-24 Celsius (70-75 F) and see if it gets better, and,
2) Dunk the dried out cakes to see if they can be revived.

What do you think? Anything else I should do?
The FAQ talks about cakes that aren't pinning because they're fluffy and white, but I couldn't find anything about cakes that are drying out.

What are you using for humidification? How do you know that the humidity is at 95%?

From your description I would say that the humidity in your fruiting chamber is too low. A dunk will revive the cakes but if you put them back in a dry chamber they will just dry out again.

how does anyopne feel about the whole straw put into the cake idea. i heard it and decided that is the rout i would go for rehydrating the cake. input on the tek would be great.
(drill a hol einto the top of the cake, then continue to inject an amount of water into the straw. thus rehydrating the cakes, and providing suitable conditions for nice hearty flushes.)
p.s- i am an idiot.

never tried it, but always thought it looked like trouble.
you can get the same effect easier with less contams by dunking between flushes.

>What are you using for humidification? How do you know that the humidity is at 95%?

I've got an ultrasonic humidifier hooked up to a humidistat. In the fruiting chamber I have a digital temperature/humidity meter. The humidity meter reads up until 94%, then it simply reads 'Er' (for error), so I know it's at 95% or over if it reads that. However, the cakes are still drying out, which is why I think the temperature may be too high, although it's only 24-28 Celsius (75-82 F).

>how do you know there drying out?

The outside surface of the cake gets harder and the cake shrinks a little bit, whereas when they're placed in the chamber after birthing, they're fuzzy.

I guess what I'm looking for from this forum and couldn't find in the FAQs is something like: "Yea, my cakes were drying out too and I just [insert solution here], now my cakes are pinning all the time". Feedback, anyone?

"Yea, my cakes were drying out too and I just scratched the sides, then dunked them in plastic ziploc bags in the fridge overnight , now my cakes are pinning all the time"
