Cold Shocking..
    #1148528 - 12/17/02 09:20 AM (21 years, 3 months ago)

hey, question about cold shocking.. I am contemplating cold shocking this casing I have had for a few days now waiting for it to pin(4 days).. I'm not really in a hurry, because it's only been 4 days, but if it happens to take forever, and I decide that I want to, then I'd like to know.. does the cold in a refrigerator kill most airborne bacteria? Because the refrigerator I have access to isn't in the best of conditions, and didn't know wether using it would be worth the risk or if at this point, it didn't really matter much, and the casing would survive a decent amount of abuse?

The case has fairly strong myceilial growth throughout it, the entire top is evenly covered at around a 33% opacity, is being fanned twice a day, and given an hour of light a day

No. You have to put the casing/cakes in a zip loc bag before putting it in the fridge.

In reply to:

NO, it just slows it down. (Low temp- chemical reactions go slower ...)
I personally think it doesn't kill any bacteria at all ! Ever had milk go bad in the fridge?
Peace
