Is it too late to dunk my cakes if they've been in the terr. for 10 days? There are no pins yet; just knotty/fluffy mycellial growth. Should I just wait untill after my 1st flush?

Nope! Not too late. Dunk away! Dunk for 12 hours in your fridge for the first flush, 24 hrs for the second

when you say dunk, you just insert the cake into a mason jar full of distilled water and close it so it will hold the cake underwater?

Yeah you can dunk. And i'd watch putting my cakes back in the jar they colonized in. When i did this the cake swelled up from the water intake and it was damn near impossible to get back out. May not happen to you, but just a word of warning. Good luck,

as long as you dont see pins i do belive you should be fine for dunking. so dunk it
