Incubator? You mean the cakes are still in the jars right? there's not a whole lot you can do before you birth, and even then I wouldn't use bleach...peroxide does the trick.

bleach may be excessive thoght. h2o2 would be fine as well. I prefer alcohol......but I am not sure if your talking about an incubator with a fishtank heater in a jar or a fishtank heater in water and the jars of substrate in the water as well?....

I have used bleach without negative side effects. You do run the risk of splashing the water on your clothes and bleaching them though. If the jars are sitting in the water or can fall in it, the bleach might get inside through the innoculation holes, so be careful. Like said above, you can just use peroxide, just pour some in, don't have to worry about using too much and its cheap.
