Incubator Setup Question

My Incubator . . .
Equipment: Old Fishing Tackle box, Heating Pad, Towels, Indoor/Outdoor Digital Thermometer (the kind with a Dime-sized Temperature gauge at the end of a wire.
Setup: Put the Heating pad on the bottom of the Tackle box. Place Two Towels on top of it. Put down Temperature gague on top of the towels. Place Jars on top of towels with one sitting directly on top of the gauge. Put one towel on top of Jars. Close the Tackle box lid. Wrap in one final Towel.
Question: I'm getting a reading on the temp gauge that moves anywhere from 79-82. I don't want to cook my jars, so this type of heat OK for incubation? The air around the Gauge (I believe) to be around 78 degrees, but there is some direct heat coming up from the pad to keep everything nice a toastie (I live in a cold area). I've tried the Fish tank heater thing, and while it works great after birth, I'm having trouble getting an area above 73-74 with it at max. My last set of jars took an absurd 11 weeks to incubate, and I'm just trying to speed up the process a bit.

This is just a thought, but maybe you could add just a small amount more water to your jars, since it will have direct heat on it and that usually inhibits evaporation, other than that I would say your fine.

What type of container did you use when you tried the fish tank heater? If you live in a cold area you may want to use a container that is better insulated than a tackle box. In reply to:

What size jars? 11 weeks is a damn long time for any size.

80-84 or so id say is fine.
BUT i would ditch the heating pad. any sort of heat like that is bad.
you need radiating heat. get a 50watt fishtank heater stick it in a jar/plastic bottle full of water. silicon it up then play with the temps. mine i have it set to the max and i get a high of 86 in my incu-bucket. my jars seem to love the warmth
anyways yeah i got alot of half colonized jars from that sort of heat. sucks

86 is the peak of growth for mycelium while incubating try not to exceed.

My last batch as a bunch of B+ 1/2 pint jars. I just stuck them in my closet with no incubator and my average temp in there was between 55-65 at the time, that is why it took sooooo long.
Anyway, with the fish tank heater, I tried sticking them into a plastic cooler, the heater in a big glass of water and the jars on the other side of the cooler. I was just using a basic thermometer, and was getting readings near 73 (which is my usual fruiting temp). I'll try the fish tank heater in another more insulated container and see what happens.
I want to avoid the 1/2 colonized jars . . . yuck.

works fine for some guy i know colonizing almost all jars at 100% in 11-18 days depending on spore syringe strength

I was haveing trouble with my previous setup (stacked rubbermade containers w/ awter and 50W fish tank heater in lower one). I switched to an insulated plastic cooler and submerged the heater in a glass jar (pasta storage jar). temps stay a steady 80-82F and growth just took off!!!
