hello again well i have some news and i need some help.
i have a 70% possable success rate with having driven around the local town and talking to restaurant managers and head chef's. 3 out of the four said they would buy them "the oyster that is"
so what is my next step .......well i hear you GOTO be certified?????
what the hell is that and who does it.
does any one feel like putting in this thread the rules and regulations. for the sale of oyster mushrooms in Colorado. please....
this is were i start to ramble.....
i am at present looking for the regs but i have so much i need to do
4 logs that need re-bagging 4-5 logs that need spawning logs that need dunking and logs that need making
I'm just logged out man and if you got time i would appreciate the input for my logs.
and any pointers for getting the certification

If they will buy them, they will buy them. If you have restaurant quality oyster mushrooms available and a willing buyer. sell them. If they are good mushrooms, they will sell. Take care of your logs and worry about the regulations later. Your first step should be growing great edibles. I'm not saying don't be professional. I'm saying that the quality will speak for its self. Meanwhile, you can focus on your technique. And possibly google "business model." I'm trying to do the same thing you are and I know that the first step is growing good mushrooms. Until I get that right, there is no need to talk to anyone about it. It sounds like you are having some success. Right on! So focus on the prize. Know that it is going to take time and if it were fast easy cash; someone else would be doing it. There is a great read in one of the forums that I found today about this kind of thing. An old thread but inspiring. Good luck!

I know in Florida, as long as you sell them fresh, there is no certification. If I dry them, and sell them.. then I am processing them and have to get inspected as a processing facility (which is also not allowed to be in your home).. but that's Florida.

they all "restaurants i went to" liked them.

Three out of four ain't bad though. Maybe it generated more interest than just the mushrooms.
Chefs usually aren't squeamish. I don't think it would go over well with prissy diners though.

I have taken oysters growing on buckets in to restaurants before just to show chefs how they are grown. One of my chefs likes to put a fruiting bucket up on his expo window where his guests can see it.
I don't think it is a bad idea to take fruiting logs in on your initial visit to a new place. I think most chefs who use local produce will be interested in seeing how it is grown.

Just be careful selling without licenses/liability insurance. Say the chef lets your mushrooms rot or spilled chicken juice on them and didn't wash or fully cook( salmonella )then serves them to a customer who gets food sickness. Then they go to hospital , Dr reports the food illness, health dept goes to restaurant to investigate. They find it was your mushrooms , trace to supplier ( YOU) ....... Not good, not likely , but very possible.

this was my thoughts about the whole thing.
you just do not see mushrooms growing in the alpine rockies that often especially with snow on the ground in some places.

my pitch
hello my name is joe
here is my card "im a potter too" but thats not why im here. i have started a new business venture in growing mushrooms. were i am at right now..... in all off this..... is that i searched the hills right there "point at nearest hill with aspen trees" for the last 3 years to find an oyster growing wild up here around 10K foot and Finlay found one this spring. i brought it home and cultured it to grow in captivity. well "open mushroom box" as you can see it likes its new home. i would like to give you some as a sample to cook for your self and anyone else who might be part of your organization that decides your menu.
this is an oyster that growers naturally in this area and these as you can see were grown in captivity locally and this harvest amount you see here will quadruple in 2 weeks as i am increasing out put and it will quadrupole again in another month.
go ahead pick some you got a bowl."they pick some from the logs " i then pick a few and say time for a snack and have myself a little mushroom enjoyment moment with them smelling and tasting them."they do not suck!!"
now that they have my card and a sample i ask if they would not mind passing on that i am growing this and looking for buyers locally and that i am expanding "again ....might even mention the fact that i could be expanded to the pounds/ day in as little as 4 months." i say have a good day and please enjoy them with someone for lunch or dinner. you will see this could be a good thing for both of us.

I wouldn't get anyone to eat a raw mushroom. And pleurotus at least, to me smell vaguely like rotting meat or fish. Elms smell good.
Even if they are not sensitive to them, mushrooms are very hard to digest, pareticularly oysters, and a lot of people get upset stomach.
I cook the shit out of them when I eat 'em. I won't even eat regular supermarket agaricus raw anymore. They have agaritin compounds in them that are not healthy.
I also know that some mushrooms are poisonous until cooked.
You pitch reminds me of something out of the old south during the depression. Are you leaning on the back of a dusty old pick-up truck and chewing on a straw when you deliver it ?
I pictured a young Paul Newman saying it.

thanks i guess to be more specific how do i get my strain certified?
i think i will continue in a new thread on just that.
so look for it under now i have captured a strain and want it recognized.
would anyone here be able to help with putting a name to the strain and do the lab work?
i guess i need the opinion of an accredited mycologist to help here in giving an analysis or evaluation of the mushroom i want to sell.
