Phoenix Oyster Bucket .....

This is my second phoenix oyster bucket, doing well now that I have the air exchange all tweaked in better then before ...

BTW ........ if I want to pick these tonight and cook them in a few days (probably saturday) whats the best way to store them??

Put them in a paper bag and stick em in the fridge. I would eat them ASAP though, because phoenix oysters have a nasty tendency to keep growing and the mycelium will form new primordia on the fruit itself.

Definitely keep in the fridge.  I have seen these start to form new primordia on themselves, but only when stored at room temps.  Just a few days ago one of my chefs showed me a box of oysters that were over a week and half old.  They were stored in a cardboard box in his walk-in cooler for that amount of time and still looked better than the oyster that I see in Whole Foods.

I got oysters kept in the fridge to form primordia on themselves, but it took about a month. I guess you wouldn't have waited that long Lokel :wink:.

ozz, thats amazing man,good work indeed, i got a mini laundry oyster basker nearly ready to fruit, where should i put in north england so temps out side are good?

in outdoor mini greenhouse. got one of those or in the open air, first time for me , so a bit stumped?

I know they need a lot of FAE but watering etc.... its plain straw in the mix.

any ideas?

I felt bad about selling some oysters that had been in my fridge for 4 days.  Over a month is never going to happen so I guess I'll never get to see that.
