Excellent
point about the cooling phase of PC'ing. I never really considered how much air (potentially full of contaminants) gets sucked back into the PC as it cools. Thanks!

I followed the instructions to a T... but growth is stalled. I have white patches maybe the size of a quarter in half of my jars. How can I speed this up? Do I need to add more moisture?

If you do not soak the grains, wouldn't something as dirty as WBS contaminate due to endo spores not germinating, calling for an extended PCing time. It's never recommended to cook for less than 90 minutes and if the seed isnt saturated in the least to begin with, you could be looking at cooking for about 2-2 1/2 hours for proper sterilization. i really cant see this being an effective method for preparing WBS. Why take short cuts when you could do it right and have a better chance of success.

I'm sure this works, I'm just curious as to how you can say it's "fool proof" when you give pretty vague instructions for how much water to add. Real fools need everything spelled out in precise terms.
Anyways. Not to knock your method, just a suggestion. I don't measure anything either, but I simmer my WBS before I pressure cook it.

I've followed this method roughly and surprisingly enough it worked like a charm.
The only difference was that I put dry wbs into jars straight out of the bag and then filled those with water and shook. After shaking and letting it settle a few times it was very clean. I replaced the water after each shake as well as removed any floaters until eventually the water remained clear and the floaters were all gone. Then I removed all water and filled to roughly where this tek says to and PC'd. I did 4 jars and 1 didn't make it.
Fill with water, Shake, let settle, remove floaters, replace water,
Repeat. . . . until the water is clear and floaters are gone.
Fill water to just above the middle mark of the wbs total depth and PC. - hell a pinch of gypsum in the final water addition would probably stop any issues with clumping after the pc.
