This tek is great! However there's no need to skim off the floating seed. There's nothing wrong with the floaters. They're just seed that has caught a bit of air within the hull which makes them float. When you soak them for an hour or so, you'll be able to make the floaters sink permanently by tapping them.
You can verify that the floaters are not any less nutritious or hollow in any way by crushing one between two spoons. They have just as much inner material as the sinkers. So you can save yourself a lot of time and not worry about floaters.

When the spores are ready to "spawn", (fruit=after the WBS is 100% colonized), you can either dump the spawn into an appropriate container and case it with your favorite casing material, (I use Coco-Coir only for my casings), or spawn them to a bulk substrate like straw/poo and case them with your favorite casing material. As for my fruiting chamber, I use a large plastic bin/container. I place some wet Perlite in the bottom of my bin and set the casings on-top of the Perlite and cover it with the lid--that's it! When I mist/fan, I just open the lid and wave my hand or a clean piece of paper next to the opening and mist into it-pretty simple.
The best temperature to fruit cubensis mushrooms, that I have found, is @ room temp-yes, just set the bin somewhere it can get some light(in the corner of the room you sleep in works just fine). As long as your room stays at or around 70*F-75*F they will be perfectly OK!
