I am not sure if it cuts down on possible contaminants by lettings them cool in the PC. Of course you do not want to speed up cooling so the jars do not crack.
But if you let them cool for 24 hours in the pc, then inoculate them, then the jars are left out in the open where you risk "...airborn contaminants land(ing) on the lids of your jars." You've only cut down on contaminants for 24 hours before the jars are left to incubate.
But if you let them cool for 24 hours in the pc but the jars are taken OUT of the pc after it's cooled a bit (3hr), then innoculate them, you "risk" contamination the whole time they are out of the PC.
But what is the risk? This is what your fine verm layer on top is there for..to cut down on air born contaminants.
What difference does it make if you cool the jars in or outside the PC as far as contaminants go? If you are going to get contaminated...whether its before or after you inoculate, it's a bad deal.
So IMO I don't think it matters if you cool outside the PC as far as contamination goes. I could be 100% wrong though, if I am someone please chime in.
