Why should they be "cracker dry"?

Cracker dry mushrooms keep best for prolonged periods of time. If you don't dry your mushrooms completely you risk that a mold develops on the moist mushrooms and ruins them and potentially ruins your health. So dry them cracker dry and store them in an air tight container.
