I'll see how it comes out in a bit...I forgot to heat up the bowl 1st with hot water tho! >:(

The down side to using 100% whole wheat is that it wont ferment(poof),Try about 90/95% bread flour(3 cups bread flour (1/2c whole wheat))..Powder free gloves, spayed with oil are great for kneading..A cool rise adds flavor..

it poofed just fine :P you just have to let it sit longer if you want it lighter,

Congrats on your loaf of satisfying goodness! I learned to make bread several years a go from my grandmother and have now involved my kids with the tradition. We use her honey wheat recipe and will usually make enough to do a loaf and a pan of dinner rolls.

I just finished baking my first pan of this recipe. Damn tasty bread, though next time I think I'll let it rise more the second time.

yeah ive come to find that it definately needs to rise more the second time before baking. ive got a better recipe that i need to find and post here.

im currently waiting for these two to rise for the 2nd time, makes two loaves, i left one exactly the same, but added a tablespoon of freshly minced garlic and a tablespoon of dried thai basil to the dough, and kneaded it in very well. should make for an interesting loaf!
INGREDIENTS
* 2 cups warm water (110 degrees F/45 degrees C) * 5 cups whole wheat flour * 1 tablespoon active dry yeast * 1 teaspoon salt * 1/3 cup honey * 1/3 cup vegetable oil
DIRECTIONS
1. Dissolve yeast in warm water. Add honey, and stir well. Mix in 2 cups whole wheat flour, salt, and vegetable oil. Work rest of flour in gradually. Turn dough out onto a lightly floured surface, and knead for at least 10 to 15 minutes. When dough is smooth and elastic, place it in a well oiled bowl. Turn it several times in the bowl to coat the surface of the dough, and cover with a damp cloth. Let rise in a warm place until doubled in bulk, about 45 minutes. 2. Punch down the dough. Shape into two loaves, and place into two well greased 9 x 5 inch loaf pans. Allow to rise until dough is 1 to 1 1/2 inches above pans. 3. Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes.

2 hours, including raising time.
1 1/4 oz package active dry yeast 1 1/4 cups warm water 3 tbsp olive oil 3 tbsp fresh chopped rosemary 1 tbsp fresh chopped sage(optional) 1 tbsp fresh chopped oregano(optional) 1 tbsp fresh chopped parsley(optional) 1 tsp cracked black pepper(optional) sliced kalamata olives (optional) 3 cups all purpose flour 1 teaspoon salt olive oil for brushing seasalt for garnish
Combine the yeast and warm water in a large bowl. Stir in olive oil, herbs(rosemary, sage, oregano, parsley, pepper), olives and flour and knead to form dough. Turn the dough onto a floured surface and knead for 5 to 6 minutes until smooth. Pour some olive oil into the original bowl, add the kneaded dough, turn a few times to coat. Cover with a clean dish towel and let rise for 1 hour.
Punch down the dough, return to the floured surfce and knead a few times. Using a floured rolling pin, roll the dough into a large circle about 1 1/2 inches thick. Transfer the dough to a lightly oiled cookie sheet. Poke several holes in the dough with a fork, sprinkle with salt and a few fresh herb leaves and brush with a little oil. Cover again with the towel and let rise for 20 minutes. While the dough is rising for the second time heat oven to 350. Bake for 30-35 minutes until lightly browned. Remove from oven and let cool for 10 minutes.
