Absinthe Distillation Pictorial

So the day has arrived.  I got my herbs on Monday, and just today started the process towards my own home-made absinthe.  Here we go!

Step 1:  Get myself organized.  These are the herbs I will be using for the process.  We have Grand Wormwood, Anise Seed, Fennel, Hyssop, Lemon Balm, and Small Wormwood (these herbs are all high quality organic herbs).  Also pictured is the alcohol I will be using, the maceration bottle (empty wine bottle, Stoneleigh Sauvignon Blanc...yum), my triple beam scale, and some distilled water. (never mind that bowl of potatoes :grin:)




Step 2: Weigh out 14g Grand Wormwood, 28g Anise Seed, 28g Fennel



On top we have the Grand Wormwood, left the Fennel, and right the Anise Seed:




Step 3: Grind herbs in blender and place in single bowl (You should've smelled this!  Absolutely amazing aromas filled the kitchen at this point.) 




Step 4:  Add ground herbs to empty wine bottle (pictured right is me stirring the grounds with a skewer to help them through the funnel)




Step 5: Measure out 500ml of 85% ethyl alcohol (450ml of 95% diluted with ~50ml of distilled water)




Step 6: Add alcohol to bottle, close up and shake



There you have it :smile: 

Phase one complete.  After letting the whole macerate for 24 hours I will commence distillation.

Yum,, sounds like it'll be tasty.

I'm still dabbling with the basics and enjoying myself (thank you Wiccan),, recycling old homemade wines from years ago that didn't turn out too nice.

I would love to have a taste of that when it's ready,, :smile: .

Wow, this pictorial will be great! If you keep up the quality perhaps a PDF should be made of it!

What kind of still do you have?

I particularly like the odor of Hyssop, and I can tell you it transfers wonderfully to the absinthe!

For nomenclature's sake, here are some names used for the same herbs:

Grand Wormwood = Wormwood = Absinth Wormwood (Artemisia absinthium)
Anise Seed = Aniseed = Green Anise (Pimpinella anisum)
Fennel (Foeniculum vulgare)
Hyssop = Herb Hyssop (Hyssopus officinalis)
Lemon Balm = Melissa (Melissa officinarum)
Small Wormwood = Roman Wormwood (Artemisia pontica)

These alternative names greatly help in looking for them at herbalists, offline and on. A pound of any of these herbs should cost about $10-$30. If you like distilling absinthes it pays to secure a cheap source for Wormwood and buying a pound or kilo of it, wormwood is a rarer find than most other herbs and it just isn't an absinthe without it.

Not mocking here, absinthe herb mixes smell absolutely wonderful, especially in this time of artificial aromas.

You wouldn't believe how hard it was to find the pontica!  Far more hours than I like to spend at the computer.  But it was all worth it :laugh:

As for the still, I will be using a wok still for my first run.  Perhaps once I start doing this more often, I will pick up a 3-4 liter copper alembic still.

Its all done!  It took a while, but I must say that it was worth it!  Here is the next phase in the process:

Step 1: I started out by washing all the equipment to be used in the still, then I ran a test run with tap water to make sure everything was working properly.  Here are some pictures of the mix after 24 hours:
 


Step 2: Now its time to get down to business!  Add 250ml of water to the 500ml mix.  Pictured left is me adding the measured water to the maceration bottle, in small amounts at a time, to get out the last remaining herbs. 




Step 3: Add the liquid (herbs and all) to the still




Step 4: Put the wok on, fill it with 2 liters of ice and half a liter of water



Here is a pic of inside the still:




Step 5: Turn on the stove, set to medium low, and let the still do its thing. 

Not much to see, but it felt weird without a picture here :lol:




Step 6: Within no time at all, I had collected 500ml of clear liquid that smelled heavenly



This is what the herbs looked like after distillation:




Step 7: Now its time to colour this concoction.  Weigh out 5.6g Hyssop, 5.6g Small Wormwood, 2.8g Lemon Balm (top is Small wormwood, right is Lemon Balm, and left is the Hyssop) and crush it up with fingers. 




Step 8:  Add 250ml of distillate to a pot and heat up to a temperature no warmer than a finger can bear.




Step 9:  Once hot enough, stir in herbs and allow to cool




Step 10: When cooled, filter using a coffee filter and recombine with other half (make sure to squeeze the herbs, as there is still quite a bit in there)

 


Step 11:  Once combined, filter one more time and bottle




Step 12:  The hard part, age at least 2 months before imbibing.

There we have it.  I seem to have lost 100ml between distillation and bottling, but nevertheless, I have 400ml of homemade absinthe!  Now that I have the idea, I am going to make a larger batch next time.  The next pictures in the series will show a glass being prepared, and the stages of louche as water is added.  Maybe I will do that now :laugh:

Just prepared a glass, and holy fuck its delicious!  It tastes way way better than my bottle of La Fee, and its only a couple hours old!  So much more complexity, and its not as strong on the anise either.  La Fee tastes like a dolled up pastis (it is still quite delicious), but this, damn!  I cant believe I made this!  I have been thinking about making my own absinthe for years and now here it is, in my hands.  :smile:

It is a nice peridot green, and louches wonderfully!  Once my phone uploads the rest of the pictures, I will post them.  Oh happy day!  :birthday:

I should note that this is my first attempt, and this is by no means a perfected recipe.  I plan on making many small batches until I find one that I really dig.  Once I have about 5 different recipes/methods made and aged, I am going to get 5 friends together (2 of which are sommelier's), and we are going to sample them and decide on which one we like the best.  Once we have reached a verdict, I am going to make a larger amount (~20 liters) for longer aging.  Ultimately its really the one I like the best, but its nice to get input.  Then I will make a liter here or there if I want to experiment.  Maybe the first Canadian absinthe you see on the shelves will be one of mine :wink:

Before I try any other ingredients I want to find the right balance with these basics. 

I want to give another go at this recipe, I don't feel I did it as well as I could have.  I think I distilled it too fast and lost a lot of vapor.  Next time I am going to put the still in an electric skillet filled with water.  Hopefully I can better control the temperature this way.  For those interested, here is an abbreviated version of my recipe:

Batch No. 1
14g Wormwood
28g Anise seed
28g Fennel
5.6g Roman Wormwood
5.6g Hyssop
2.8g Lemon balm

1. Grind first 3 herbs in blender
2. Soak for 24 hours in 500ml of 85% alcohol
3. Add 250ml water
4. Place solution in still
5. Distill and collect 500ml
6. Crush up colouring herbs with fingers
7. Heat half of distillate to temperature no warmer than my finger can bear and macerate roman wormwood, hyssop, and lemon balm
8. Remove from heat and let cool
9. Filter and recombine with other half
10. Filter one more time with coffee filter
11. Bottle and age at least 2 months before imbibing

500ml x 85% = 425,  425/95% = 447.4ml
500ml of 85% = 447.4ml of 95% + 52.6ml water

Alright, so I am going to be trying again next week.  This time, I am going to build a still using a 4000ml erlenmeyer flask, and a rubber stopper drilled with a hole large enough to suit the copper tubing which will wind its way through a bucket of ice water.

As for the method, I am going to try adding 400ml water instead of 250, and will distill the solution a lot slower.  With the still I plan on building I can collect an ounce or two at a time and watch for the feints to appear.  This way it will be more precise, and less of an approximation.  As a heat source I will use an electric skillet filled with an inch or two of water. 

The goal of these modifications is to increase the yield, but I am not really sure how much I can expect to collect.  I guess I will find out :smile:

When you macerated in ethyl alcohol, what kind did you use? I've heard that using wine spirits is better, but also I've heard of Everclear being used. What is the best alcohol to use to macerate the herbs in?

Anyways nice work and thanks for the pics I was planning on distilling some absinthe this fall too as I have quite a few wormwood plants growing. I guess ill have to find the other herbs elsewhere though...

Alright, change of plan. 

I did some lurking at the Home Distiller forums, and it seems that I may have done a few things incorrectly. 

Here is the method I will be following this time:

14g Wormwood
28g Anise seed
28g Fennel
0.6g Roman Wormwood
0.6g Hyssop
0.3g Lemon balm

1. Grind herbs in blender
2. Soak for 24 hours in 500ml of 85% alcohol at 30-40 degrees C (a hot water bath works well for holding this temperature)
3. Add 250ml water
4. Place solution in still
5. Distill SLOWLY and collect 500ml
6. Switch receptacles and continue distilling, saving tails for future runs
7. Crush up colouring herbs with fingers
8. Heat half of distillate to a temperature no warmer than my finger can bear and macerate roman wormwood, hyssop, and lemon balm
9. Remove from heat and let cool
10. Filter and recombine with other half
11. Filter one more time with coffee filter
12. Bottle and age at least 2 months before imbibing


If you look, you will notice that I am cutting the colouring herbs down quite a bit.  It seems that to obtain adequate colouration, you must scale the colouring herbs down by another factor of 10, after scaling down the recipe.  This way I can conserve my precious (expensive) Artemisia Pontica.  After colouration, if the solution isn't dark enough, I can simply add more herbs to the mix. 

The more I look at my pictures, the more I realize that it didn't really louche that much.  Hopefully by adding heat to the maceration, I will be able to pull out more of the oils from the mix.   

I am just going to use a 1.14 liter glass bottle submersed in a water bath for this run.  I will also be using my electric skillet so I can better control the temperature.  My condenser is, as mentioned previously, copper tubing wound through the inside of a bucket filled with water. 

I am working all weekend, so I will have to wait until next weekend to do this.  I cant wait! :laugh:

So I tried a run with my electric skillet, and it cant even boil a pot of water :frown:

So, I am going to pick up a hot plate for $25 and use that.  I also found a lab supply store near where I live and am going to pick up a 2000ml Erlenmeyer flask to use as a boiler. 

As for the condenser, I couldn't get a coil I was happy with so I scrapped the whole thing.  I ended up making a Liebig condenser using vinyl tubing as a jacket around a 3/8" OD copper tube. I attached two plastic tees at the ends and sealed around the copper tubing with silicone. Attached perpendicularly to the unit is two lengths of the same vinyl tubing used as the jacket.  On the end of the bottom tube, I attached a fixture to mount it to my faucet garden hose style, so the water runs up and out the top tube.  I will post a pic of this later. 

Unfortunately (and fortunately :grin:) I will be heading to Vancouver on Monday, so all this will have to wait until I get back.  Starting with this run, I will be collecting the tails to add to future batches.

Very nice pictorial and write up. I have a question though. What is the point of distillation? You are already using grain alcohol and you water it down twice, so why not just filter it through coffee filters or some other medium and call it done?

In order to remove the extremely bitter flavours from the wormwood, it must be distilled. 

Its quite remarkable how the distillation process changes the flavour of a horribly bitter swill into a drink with so much depth and complexity.

Just look at all the stuff that gets removed.

Its best to go slow with the whole process.  The solution will start boiling around 80 C.  I distilled mine using too much heat, and I nearly scorched the herbs in the process.  I think it is best to use a hot water bath to heat the solution so the temperature doesn't go above 100 C. 

For my next attempt, I will use a pot of water on top of a hot plate, with my boiler (Erlenmeyer flask) placed in that.

On that note, I will just add that my impatience got the better of me, and I ended up trying another glass.  It has gotten a lot better in only a couple weeks time, and it actually louched pretty well.  Way better than the first glass.  I had a buddy of mine over, and we did a comparison between my La Fee, and my homemade stuff.  We both agreed that mine tasted very rich and complex with a strong herbal profile, while the La Fee tasted quite simple, and was mostly dominated by the anise tasting more like sambuca.  I am wondering how my new setup will alter the flavours.  The new still I made has an ascending lyne arm, so there will be much more reflux resulting in a subtler flavour.

I also noticed that my wormwood is moderately stemmy.  It is said that the stems add a bitter quility to the distillate, so I am going to remove as much of them as possible before maceration.

Alright, check it out.  Here are some pics of my Liebig Condenser:



Here is a close-up of the Tee.  On the right you can see how I sealed it. 





The jacket is completely airtight, and I didnt use one drop of sealant.  Just vinyl tubing and machine clamps.  I went to home depot and told the guy I was making a still, and he got all excited and spent half an hour helping me get the right parts.  Gotta love Home Depot! :laugh:

Has anyone made or drank Piołunówka before?
I was wondering if it is better than absinthe.
absinthe just got me really drunk and left a shitty taste in my mouth like I just ate vicks vapor rub and licorice.

What's it supposed to feel like?
if this is it then it was not worth the 60 bucks and gross taste.

maybe I got some poorly made shit?

Not entirely true.  There are a few places to order high quality absinthe from such as LdF.  With that being said, there are many more sites that sell crap. 

But mostly I do agree.  To me, the real experience is making it, then marvelling at the creation in the form of a nice buzz.  Now keep in mind, that very often the psychedelic effects are overplayed by unscrupulous vendors reporting "High Thujone" and crap like that.  Thujone is toxic, plain and simple.  In small doses (like those present in well made absinthe) is adds a nice mild alertness to an otherwise normal drunkenness.  The amount of thujone required to make you hallucinate would have you convulsing on the ground, long before you saw any green fairies. 

To me, the added effects seem to come from the synergy of the herbs themselves (along with the high % of alcohol) rather than any one particular chemical component.  It is a very mild difference, not a pot-like buzz that I have heard so much about.  Lookat how being drunk on Tequila is different than being drunk on beer, which is different than being drunk on whisky etc...  The same difference applies to that of an absinthe intoxication.  Still drunk from the alcohol, but there is a mild difference that sets it apart.

With Absinthe there is the strange reality that most brands sold are utter crap or not even remotely close to what Absinthe is like. Its basically buying a bar that says CHOCOLATE and once home you discover theres chewing gum in it, that big a difference.

Because this thread is so great and I want to add good content to it I'll repost my advice on absinthe below:

The market is saturated with all sorts of crap at sometimes outrageous prices. It is important to realize that a lot of "Absinthes" you can buy quite often have nothing to do with real Absinthe. Here's advice on which kinds to buy, at what price, and how to prepare it. The preparation is detailed in the attached video.

OK, here goes.

Absinthe can be bought in bottles of 0.1, 0.2, 0.5 and 1 liter.

For liters, you can expect to pay $50-$150. Since a serving of absinthe before dilution measures 20-30ml, this boils down to $1-$5 per glass.
Here are brands that come highly recommended:

DUPLAIS (Balance, Verte, Blanche)
FRANCOIS GUY
HELFRICH (Verte, La Blanche)
JADE (Edouard, Nouvelle Orleans, PF 1901, Verte Suisse)
LA VALOTE (Bovet, Fornoni, Martin)
LASALA (spanish Absenta, can be had for $35/liter)
SEGARRA (spanish Absenta)
UN EMILE 68 (also their La Blanche)
VERSINTHE (Verte and especially La Blanche)
VERTE DE FOUGEROLLES

These 20 Absinthes from 10 houses all are top notch quality, contrary to the extensive list of crappy or even false Absinthes. You can expect to pay $75 a liter on average.

As you can see there are two kinds of Absinthe: Verte (green) and La Blanche (white). Both are traditional. Basically the distilled Absinthes are La Blanche, and when additive herbs are steeped into it it gains flavor and a green color, producing a Verte.

If you have not a clue which to select my personal choice for the beginner would be to buy a 0.5 liter bottle of Duplais Balance (costs about $35, 15-25 glasses) which is a rather good Verte absinthe, and to buy an absinthe spoon with it.

You can use a white wine glass to serve Absinthe:



Make sure the glass can comfortably hold 130ml (30+100) or 90ml (20+60) which your Absinthe requires, and that it is fairly wide so it can fit an absinthe spoon. If you want to improvise entirely, a metal tea-strainer can be put on the glass to hold the sugarcube, and a teaspoon can be used to stir the dilute Absinthe afterwards.

An Absinthe preparation that's good for all kinds is to take a wine glass, pour in 30ml (20ml) of Absinthe, then pour 100ml (60ml) icecold water over one sugar cube on an Absinthe spoon, then stirring until all sugar is dissolved in the dilute Absinthe. Upon diluting, most good absinthe turns cloudy (the "louche") or even becomes so cloudy as to become non-transparent. This is usually a good sign, whereas absence of a louche usually is a bad sign.

You drink Absinthe by taking a sip, and spreading it through your mouth for some time before swallowing. Let the aftertaste linger before you sip some more. It is all about the taste, and a good Absinthe has a lot of taste to it. You should relax and take your time for enjoying Absinthe - if a glass lasts you at least twenty minutes before its empty, you are on the right track. Absinthe is not for chugging, and isn't about getting hammered either.

I cannot stress enough that Absinthe should always be diluted with water, 2-5 parts of water to one part of Absinthe. Drinking it neat is like drinking lemonade syrup neat: you can't expect it to taste good that way. Adding one cube of sugar is most common, some add two and others none. Sugar helps to bring out the flavor.

It's important to realize that Absinthe, real Absinthe, is a drink with often a strong anise flavor to it. If you don't like anise, chances are you won't like Absinthe.

Absinthe is best reserved for before or after dinner, or at the close of day, alone or discussing with friends. I recommend against drinking more than three glasses on a given day: if alcohol becomes a factor it is best to switch to a less refined drink better suited for stiff drinking. Absinthe is too expensive to get drunk on, it has too much flavor for continued drinking, and may give rise to a fiendish hangover if drank in excess. For the frequent drinker, one glass of absinthe a day is the most you should drink of it, and preferably more days without absinthe than with to keep it special.

Well, it seems I am going to have to wait a bit before I do a run with my new condenser.  Funds are low this month, and I cant afford to buy the rest of the supplies I need.

Bloody hell :frown:

Oh well, I am going to do another run with a wok still of a slightly different design this time around.  I will post a pic of the new still as soon as I find the right parts.

Alright, another re-design on the recipe.  I actually managed to pick up the rest of the supplies, and will be commencing next weekend.  I am going to make a liter this time, so I have more to last me until subsequent batches have a chance to age.  Here is the new method/recipe:

25g Wormwood
50g Anise seed
50g Fennel
1g Roman Wormwood
1g Hyssop
0.5g Lemon balm

1. Grind first 3 herbs in blender
2. Soak for 24 hours in 1000ml of 85% alcohol at ~30 degrees C
3. Add 450ml water and 500ml Arak (replace with tails once collected for subsequent batches)
4. Place solution in still
5. Distill SLOWLY and collect 1000ml
6. Switch receptacles and continue distilling, collecting 500ml of tails
7. Crush up colouring herbs with fingers
8. Heat half of distillate to a temperature no warmer than my finger can bear and macerate roman wormwood, hyssop, and lemon balm
9. Remove from heat and let cool
10. Filter and recombine with other half
11. Filter one more time with coffee filter
12. Bottle and age at least 2 months

I just thought I'd add that my previous batch is aging quite nicely.  I got impatient again, and ended up having another glass.  Solid louche, and a nicely balanced flavour.  The alcohol still has a bit of a bite to it, but hopefully that will smoothen out in another month or so.

Dont ever add melted sugar to absinthe.  That is a guaranteed way to ruin the subtle flavours and give your absinthe a burnt sugar taste.

That whole fire ritual wasnt started until the early 90's to help disguise the taste of the crap they were passing off as absinthe (which was basically a liquorice flavoured, high proof spirit).  Awful stuff.  Real absinthe should be prepared like this:

I spent 90$ a few times for the pernod version of absinthe
loved it
but can't keep up the luxury level of it.

Piolunowka is polish equivalent of absinthe, and as of what i see here it doesnt look like it's any better as its made by pouring alco over the wormwood... and its got bitter taste...

So my interest in distilling has peaked again.  I recently moved across the country, so I had to leave everything behind, but I have procured a few goodies that will help this time around.  I scored an electric pressure cooker with a perfect hole to fix some copper pipe to, plus it can boil water damn fast, and has a really responsive temperature control.  Another bonus is that I can do all my distilling in the back yard :smile:

I am going to start designing another condenser; perhaps something a little simpler than the last one. (maybe I will take another stab at the coil through water design)

I should add that I have a friend here who lives in the states (I live like 10 minutes from the border) and he let me order a bottle of Jade PF1901 to his house from LdF (See I live in canada, and LdF wont ship here for some stupid reason) so I finally got to try some damn good absinthe.  It beat the hell out of mine :lol:  I think I would like to order some more soon as I only have one glass left in my bottle of Jade.  I want to get a bottle of Jade Edouard to try another Jade flavour, but if anyone can recommend me some others that would be great (Wiccan_Seeker, what would you say are your top 3?)


Anyway, just thought I'd let everyone know where I am at with my distilling project :smile:
