Beer Cheese Soup

2 tablespoons butter 1 cup chopped celery 1 cup chopped carrots 1 cup chopped onion 3 (14.5 ounce) cans chicken broth 8 ounces shredded Cheddar cheese 1/2 cup all-purpose flour 1/2 teaspoon prepared Dijon-style mustard 1 (12 ounce) can or bottled beer
Directions 1. In a medium pot over medium heat, melt butter. Cook celery, carrots and onion in butter 5 minutes. Pour in chicken broth and bring to a boil; reduce heat and simmer 20 minutes. Puree mixture in a blender or food processor or using an immersion blender. Return to pot over medium heat. 2. Toss Cheddar with flour and stir, a little at a time, into the pot, until fully incorporated and melted. Season with mustard. Stir in beer to achieve desired thickness just before serving.

I don't see it around anywhere, but my dad used to make this when I was a wee lil tike.
It really is a great soup and can be eaten as a meakl itself with plenty of bread for dipping, or my favorite is to have it instead of a salad with a nice BBQ'd rib eye.
Do you have and special Wisconsin cheeses that you think make the best soup?

Never made it myself, but it is some good eatin. We have this place somewhere here that serves it with popcorn on top...I always tell them "NO POPCORN!" just like that and they don't serve mine with popcorn on it.

just out of curiosity, does the type of beer that you use affect the flavour? what sort of beer do you use for the soup? lager? ale?
i'd like to try it out...too bad that cheddar costs so much here and is very difficult to find. any particular cheddar to use for this recipe?

I usually just use Bud Light - or whatever I have on hand, but a lager or pale would be best (I think - never tried it with a darker beer).
I have been using a simple medium cheddar - works great!

If your going to use a sharp cheddar cheese, your going to want something with bitterness to match with the piquant high acidity. The recipe I have always used calls for white sharp cheddar cheese and I have always used cheap lighter beer, tastes bueno. Just to let you know, popcorn is the shit! French bread tastes great, too.

Ghetto Absolutely not Beer Cheese Soup:
2 Cans mixed veggies 3 Cans condensed chicken noodle soup Dash Onion powder
Combine in pot, cook while stirring 5 min. Simmer with lid 20-25 min.
1/2 cup All purpose flour 8 oz. shredded Extra Sharp Cheddar Randomly scooped blob of dijion mustard Couple handfuls crushed pretzels
Remove pot from heat, blend/puree.
Replace on heat. Combine flour, cheese, pretzels. Stir in.
Add one IPA (India Pale Ale), stir in.
Eat with bread.

well, i gave this recipe to my friend and both him and his wife made it this past weekend. my husband and i went shopping with him when he went to buy the ingredients and let me just tell you, it's not very cheap to make this soup here in Finland since 50grams of cheddar costs 5 euros!
in total, to make the soup it was 30 euros. but, it got raving reviews and he thanks you for the recipe.

I made this, really quite good it was. When I put the flour in, I got some lumps that formed in the soup. How does one avoid this? I also used less cheese, as 8 oz of cheese seemed too much to me. Very tasty though. I used a sierra nevada celebration ale, which fit perfectly.

Might also help in this recipe.

If you have a relatively fine sifter, you can use that too, but the whisk is an awesome way to incorporate flour.

A porter might be interesting, but I think it wouldnt fit very well. Maybe like a really sweet stout or porter, but the Sierra Nevada Celebration Ale worked marvelously. Maybe some stone ipa would work also.

Black butte porter worked very well! The soup was really good. I added rosemary, sage and garlic towards the end of the saute part.

Any beer will work.
I like a happy beer like IPA, but I've also found a simple can of shitty beer like PBR works pretty well too.
Dark beers do work well.
If you like dark beers - try my St. Patty's day fondue.

It turned out to be very tasty  I think any medium-sharp cheese will do fine in this soup and that a little bit of garlic would be a nice complementing additive too

Tonight I added a pound of chopped broccoli, 12 oz total of sharp white cheddar and pepper jack, and 1/2 a bottle of Great Lakes Oktoberfest.
I was expecting more of a cheddar flavor, but the pepper jack gave it a nice warmth.

Yes very nice, this soup is nice to play with different varieties of beer and cheeses. For example some pale ale, and a bit of smoked cheese adds a very nice touch.

yeah it was good especially with some french bread
i used tilamook extra sharp as that is my favorite cheese and a corona for beer since its all i had
i think a darker beer would be better
