Thanks a lot for the right up. I was tought to simmer the water till hot enough to be only able to keep your fingers in it for three seconds. That will help you be able to butcher more chickens in a shorter amount of time. They only need to be dipped and swirrled for a minute or two.

Yes, your right, the feathers come out easyer the
hotter the water, and the bird stays less ridgid, so guttings
easyer.
I've done a few more since, and I'm starting to get a better
idea of how to.

coo beans my friend. We got about 16 of em runnin around right now. Still a little young though. I think I will be the lucky one to teah my friend how do do the deed. I told him to pluck a feather froma wing and insert it into the ear through till it pops out the other side. Thats how the aboriginals would do it.

almost sausage time

I need to pick up some gloves for my pack

I gotta be honest - gutting a gut shot is not my fav.

Cutting up I'm cool with.

slicing and dicing is all good. But that nasty stench and fowl ooze of a gut shot is pretty ruff!

I use dogs to get the deer, so not too much mess like a gut shot one.
Still, a stinky process, but well worth it for the amount of good meat to
be had.

if you hang the chicken by its feet and put your thumb under its chin and other fingers on topof its head, just gently bend its neck sideways and you will notice a little red gland pop out....just run a sharp knife along that gland and let it hang for 10 minutes and then dump it still upside down in really warm water for ten minutes and it will be done without any fight, which adds to the tenderness.
then pluck and gut
i killed 800 chooks aday like that

Some times you dont have far to go, as the dog will
stop the deer within 500m still with in lamp range,
other times when the night
is light, the dog can continue out of the lamp beam, and
then you need to track it for the rest of the distance.

This is easyer than it sounds, as this time of year
its either misty or foggy, so the tracks are quite simple
to see in the tourch beam.

Also, you can oftern hear the deer being taken down,
then just home in on that, it helps if your fairly fit, and
not bad at cross country running in the dark

Lazy people use a 4X4 but we preffer to go on
foot.

this dog takes all his deer single handed

i knew an old kiwi guy and he said the best hunting dogs for roos were a cross greyhound and something else but i remember the greyhound part cause he reckons the roos would jump straight into dams and tread water and his dog would dive in and snap its neck in midair in one go...that dog in your pic looks like it has greyhound too
