Just for reference:

This is 5J (cinco jotas/five star) Jamon Iberico Bellota. Purchased at Despana in NYC (Lafayette and Broome)

$145 a lbs for machine sliced
$195 a lbs for hand sliced

I got this machine sliced only because I was short on time and to cut a 1/4 lbs would have taken at least 15 minutes.

1/4 lbs cost me $34






and an Heirloom tomato salad with basil and smoke ricotta from DiPalos on Grand St.

Decided to be a carnivore and eat raw meat today. I wanted a really fresh source so I went to Whole Foods for my ingredients.

The filet mignon was damn expensive! I paid close to $30 for less than a pound of it, but I guess that's what you pay for the freshest, organic ingredients.



Carpaccio with filet mignon, arugula, Parmesan, capers, and olive oil. Marinated the filet mignon in an olive oil soy vinaigrette concoction.



Will be trying out this yukke recipe (marinated raw beef tartare) with the rest of the meat tomorrow. Unlike Maangchi's I will be adding raw egg to my dish though.
