Nice! 
Texas fruits are pretty much ALWAYS really small, but the sheer amount of them, coupled with their relatively dense stems and meaty caps compensate the yield. 
Very interested on dry weight here. Be sure to clone, dammit!

It was 10 jars about 80% full, so about 8 actual quarts.

Thanks Syno! Yeah, it's a cool slope! Usually it's the outside that matures faster, but I think the added holes on the top sides are creating a better flow of air through there... speculating, of course.

Not that I didn't believe you already Facey, but yeah... they are indeed small. I haven't checked any stems yet, but here's an updated shot.

Not sure how much longer to wait... maybe a partial harvest to clear some of those middle ones?

You can cut away the caps with a very sharp knife; the ones that are about to sporulate. If you cut away the caps, doing so won't effect the surrounding fruits. If you completely harvest some, the surrounding fruits could stop growing. It happens sometimes. It'll give you a chance to check out the density of the stems too. 
Texans aren't solid like PF Redspore or something:

...but they are better than B+, to be sure.
