Deer processing

I told my dad I wanted him to kill a deer for me this season to stock my freezer, and when he asked me how I wanted it processed I really had no idea :shrug:.  Apparently the processing place can cut it up a lot of different ways and I was just wondering what the best way to get it done is.  I've only ever had deer jerky before...I haven't tried venison steaks or roasts but I'm sure I'll love them.  The only type of meat that I don't really like is fish. I'm just looking for some recommendations from people who have some experience with venison :awesome:.

get the tenderloins whole so you can slice 'em yourself, get the tougher parts ground.

Sausages are also good.  They might need to mix in a little bit of pork if the deer meat is too lean.

One of my favorite thing is deer sausage in a hotdog bun with apple butter.  MMMMMMMMMMM.

I dunno about the sausages, I'm usually not a big fan of sausage.  I am very sensitive to spicy stuff, don't much enjoy my mouth burning.  I might get some though.

They don't need to be spicy at all, i like mine completely un-spicy.  I wouldn't make them spicy anyways, it would screw up the deer flavor.

lol, i thought i was weird too when it was first suggested to me but i'll be damned if it doesn't taste really good :lol:

The same people who gave me the sausages (sister's husband's family) make home made apple butter and it's kind of a tradition for them to eat it that way.

Summer sausage is great. I just picked up a 3 lb link from a friends kill, it has little chunks of cheddar and jalapeno's mixed in. It did not last long. :drooling: :awesomenod:

Edit: Semi related, the most luscious thing I've ever eaten was a venison tenderloin seasoned with fresh herbs and slow cooked in the coals of a campfire for the better part of a full day. You could cut it with a fork.

The apple butter thing sounds pretty awesome. I love some pork sausage dipped in maple syrup.

I'm 100% likely to be cooking shroomerette
s meal and I will certainly try the apple butter idea with some of my mom's homemade apple butter

One of the best things to do with the ground venison (hamburger) is to make spaghetti. You can even mix in 1 or 2 de-cased (casing removed) Johnsonville Italian sausages for more flavor. It's the tits!

Why on earth would you not process the deer yourself?  Simply cut the meat off the bone and freeze it.  The backstrap makes nice steaks, but we always use the rest of the meat for grinding into hamburger.  You can get beef suet from your local grocery store-don't use deer fat for making hamburger.

I tried the heart a few years ago and I was skeptical too.  It was really good though. It was in a jar with onions and room temp.  The guy said he cooked it in a pressure cooker.

Well I can't do it because my dad lives several hours away and I can't go up there to do it when he gets one for me.  And I live in an apartment so even if he could bring it here theres no space to cut it up.  He used to butcher them himself but he's kinda old now and he works a lot so he doesn't really have the time.  There's a hunting store where he lives where they will process it for pretty cheap so I don't see a problem with getting it processed there :shrug: helping somebody make a living.  Thank you for the advice though.

Haha that sounds kinda odd to me too, but I believe that it could be good.  What about the liver and things like that? Does anyone eat deer liver?

I paid to have a deer processed once, the guy made about 12lbs of sausage
and every bit of it too salty to eat, my neighbor makes stuff like slim
