Hey man I just read through your whole post and I think you should buy a pc to steralize your jars. That small pot you used does not look like it would work sufficiently to me. I think that might be where a lot of your contam problems could of came from.
Even if its a 30 dollar one from Walmart . You can still fit quarts sideways,lol.

Hey all,
Well a little update. All my cakes have finished and I just finished taking the FC down and throwing it all out.
All in all it was a good experience. I never did figure out if I ever had a humidity or FAE issue and my mushrooms were never big or ever had lots but I successfully was able to start and finish.
All the mushrooms will be given away and I will be moving onto another hobby. Thanks all for the help.
Here is my outcome from 12 cakes. Sorry no scale.
