i think you are talking apples and oranges, i mean i have never even heard of Moe's and I can probably say it doesn't fit into the Denver Burrito category.
Chipotle, Qdoba, and to a lesser extent Illegal Petes fit into that category, like so many American foods each region, (except that Chipotle and Qdoba) actually borrows foods and adapts them.
I considered what it would take to do a Qdoba or Chipotle type thing at home, but it would have to be for a significant amount of people to really do it right, and have optional ingredients and what not.
Probably not hard, and honestly what they sell this stuff for is a lot more than what they pay to make it, that is why it is so successful.
