Do you see any problem using Plaster of Paris, provided you use small enough quantities that it doesn't solidify your substrate?

I live in an apartment and your Mrs Rabbit is probably more understanding of these "things" then my Mrs Scat (hehe, mrs scat). Shes all - your gonna do WHAT with a sheet of drywall in my house!

Maybe I'll see if I can get some scraps or small pieces from the depot, I also dont want to drag a whole big piece of drywall in for everyone to see..they'll think I'm building a new room or something

My local home depot sells broken or damaged drywall for $1 regardless of size. They're not allowed to give it away for free due to some silly policy.

Check your local home brew beer supply stores. They usually have both solution grade gypsum & limestone. They buy & repackage 50 lb bags & sell it by the ounce or pound. If they carry it, ask them to order you a 50lb bag or bags.
I pass by the place below once or twice a year & load up.

Thank god I live in a farm state and can get 40 pound bags of gypsum, all day for $4.99. From the last few posts by RR I have read over the last 12 hours, it would appear you(RR) know what state I speak of and we have chewed some of the same reddirt. RR you may even know the name of the nursery I am speak of.
I don't understand how you could not have gypsum available to you in your area, scat.

Oh, believe me, it's possible. There is none around me. I went to every mom and pop nursery, and when I ask they look at me like I have two heads. 'What is gypsum? We have this fertilizer, and some vermiculite.' I finally found some at a farm store. Guess why they had it? 'Yeah, we only carry this because some guy asked us to order it a lot. I think he grows mushrooms with it or something.' I just smiled.
Edit: Also, this is the same reason that they carry the large bags of vermiculite.

I dont know if I would chop up sheetrock, simply because I don't know everything it is made with. But the plaster of paris should work just fine. You simply need to mix it up, let it set, then smash it. My problem with this is that plaster of paris is just as expensive as horticultural gypsum, and requires a whole hell of alot more work!
I live over on the east coast close to a major city and many places sell it near me. Maybe you could go to a nursery and ask them to order it for you? It saves on shipping and I find that most places are happy to do it for you.

Drywall is made with gypsum, thats it. Unless you get some weird treated expensive drywall. This was not my concern...I just didnt want to smash up the drywall into bits.
How big do they need to be to dissolve anyway? The garden gypsum I got did but they were little pellets..Wondering if 1 inch chunks or whatever would dissolve.
